Food and Family Man
Tyler Florence is a long-time veteran of the Food Network and has traveled extensively in search of "ultimate" foods and flavors. He has a worldly, and at the same time, easy and home-cooked sensibility towards food. Tyler is a genuine guy, trusted because of his passion and dedication. He is a graduate and honorary doctorate recipient of Johnson and Wales University.
Raised in South Carolina, formerly a long-time resident of New York City, Tyler has now settled in the San Francisco area, with his wife, Tolan, and has three children, Miles, Hayden, and Dorothy.

When I thought about being a parent, I never really anticipated how flipping fun food can be! I’m sure if my child had issues with eating due to allergies or a physical issue such as cleft palate, I would feel differently. So, I appreciate that my son is healthy and hardy enough to handle all of the stuff I throw his way. I remember someone once telling me that the little jarred baby food was delicious. Yeah, either they LIED or I just have a fine palate developed from watching the original Iron Chef or Hell’s Kitchen. Cough, cough. It’s probably not the second. Needless to say, I don’t really appreciate the flavors found in those jars. If I don’t find the taste pleasant, why on earth would I feed my child that? It’s hard to imagine how Tyler Florence juggles two Food Network shows, three signature restaurants, a burgeoning line of kitchen supplies, and a multimillion-dollar empire, but the chef does so with finesse — and he still finds time to publish a seventh book, a brand-new baby cookbook called Start Fresh.
While promoting the new tome, he took the time to talk about his restaurant, El Paseo, and the second season of Food Network’s The Great Food Truck Race. sorry it’s been a while since i’ve posted last. the ole missus and i spent the past month moving to a new place, so we’ve been in a world of boxes and trips to lowes. but we’re starting to resurface, and all is settling nicely now. which brings me to this post. my most recent cookbook collaboration with tyler florence was released today. ”start fresh” is a cookbook geared towards cooking for babies and toddlers.
we shot this book here and there over the span of about two months, starting in mid december and finishing early february. timing couldn’t have been better for me, because at the time we started shooting, my kiddo had just rounded the corner past his first birthday, so i was a bit at a loss for what to cook for him. until my son came along, i had no idea what one fed a baby. for all i knew, babies ate bland mush and dried protein pellets until they turned 3. It is hard to argue with Tyler Florence when he is on the subject of baby foods, and why would you? Start Fresh: Your Child’s Jump Start to Lifelong Healthy Eating (Rodale 2011) features Tyler (in profile) on the cover with his daughter (who is the focus of the picture) sitting on the counter, wearing fairy wings and pigtails feeding him a spoonful from her little bowl. That’s the way it should be: parents preparing and sharing good food with their children. Tyler launched Sprout, a line of organic baby food – he knows what baby food. His aim was to market good tasting (even to adults) baby food:
Start Fresh is not an exhaustive book – it is really for parents who already have an idea of what they want to feed their baby and need a little helping hand with interesting recipes that will encourage baby not to be a picky eater. It starts with Single-Ingredient Purees, and then a chapter on Flavor Combos (6-8 months) followed by Foods with Texture (9-12 months) and Everyone to the Table (12 months and beyond). The introduction goes of methods of cooking – steaming, roasting, and pureeing, There is a handy two page calendar for writing when new foods are introduced to make sure not to trigger allergies. The foods with texture include recipes like Roasted Golden Beets with Quinoa and Feta (p. 60). There is a pretty photo by John Lee of a bowl of with a child’s green spoon. The creamy feta will hold the tiny grains of quinoa together so that not all of it ends up on the floor. Tyler introduces big flavors like Ginger Chicken with Coconut (p. 69) that includes fresh ginger, cilantro, and lime. There is also NY Strip with Asian Vegetables (p. 81) a kind of beef and vegetable stir-fry that parents can enjoy, too. The last chapter showcase even more parent-friendly recipes like Minestrone (p. 107) and Barbecue Turkey Meatloaf Cupcakes with Mashed Potato Frosting (p. 125). I am a huge fan of Sprout Organic Baby Food and I have been waiting for Start Fresh The recipes are fantastic with absolutely yummy pictures for every mouth watering recipe. The cookbook starts of with a section on basics, like what you’ll need, and how to steam, roast and puree. How to store and reheat safely. Even a little chart to track your babies first foods. There is a Single Ingredient Puree section and Flavor Combos, which also has purees in it. The Roasted Apples and Cinnamon is especially lovely! A Foods with Texture section and a Everyone to the Table section. Every recipe has a small introduction and how many serving it makes for adults and kids. This also is not a cookbook that is good only when kids are little, the recipes are fantastic and in fact great for any age! The recipes are easy to follow and creative. Here’s a great video of Tyler (see the 3:00 minute mark for in-depth coverage) in Denver for The Food Network’s The Great Food Truck Race! Since then, he’s traveled to Kansas City, Memphis, and now Atlanta, with a final stop in Miami!
